Union Electric is a quintessentially Melbourne bar, serving up some of the best cocktails in town in a relaxed and social space. Bar manager Huw Griffiths and his business partner, Shane Whiteley restored the 1890’s building, exposing beautiful brick and century-old rafters complete with hand-beaten blacksmith nails.
With experience in some of Melbourne’s most popular venues including Royal Saxon, Madame Brussels and Le Bon Ton, Huw believes “You don’t go to a bar to buy a drink, you go for an experience.” At Union Electric “We’ve designed a comfortable and intimate space where we can get to know you and tell you the stories behind each product and the people that make them,” says Huw.
This personal touch is really the essence of Union Electric. Huw and his team are “serious about bartending but we don’t take ourselves seriously,” and are constantly inventing innovative new flavours and bending rules to twist and reshape classic cocktails.
For this issue of Whisky Scene Huw as designed a simple, yet elegant cocktail that shows off the subtleties of quality Japanese whisky in a refreshing highball style. Use Hibiki Harmony to recreate this at home.
